If there’s one constant in the restaurant industry, it’s the creative output of independent restaurant entrepreneurs who maintain a steady pace of new concepts and innovation.

To help readers stay up to date with what’s new, Restaurant Business is launching a new monthly feature that will track the openings and closings of notable independent restaurants across the country.

In this inaugural article, which looks at openings in September and October, we spotted an avant-garde concept in New York described as Vienna-meets-Paris with chef Markus Glocker. In Miami, chef Brad Kilgore is crafting a menu that could include dishes like savory donuts with jerk oxtail at the new MaryGold’s. And in San Antonio, Texas, the team behind Austin’s Paperboy serves breakfast and lunch at the new Full Goods Diner in the Pearl.

We also note the loss of three beloved concepts in Seattle, Atlanta and Los Altos, Calif.
